Thai Chicken Pizza

This week is interminable. INTERMINABLE! We’re both super exhausted and everything is just dragging. In order to get a little mid-week pick-me-up, we decided to make a semi-adventurous dinner, that didn’t take up a lot of our time. I found this recipe on Foodo Del Mundo, but added mushrooms from last night’s tuna noodle casserole and omitted bean sprouts (because they don’t always last, and we’re going away this weekend).
This was a delicious dish, and decently easy for a busy weeknight. Enjoy!
Thai Chicken Pizza
Sauce:
- 1/4 stick of butter
- 1 tsp. minced garlic
- a few dashes of dried crushed red pepper
- 1/4 c. peanut butter
- 1 – 1 1/2 tbsp. soy sauce
- 1/4 can of chicken broth
- splash of orange or apple juice
- Combine butter, minced garlic and crushed red pepper. Sautee on low heat.
- When butter is melted and ingredients combined, whisk in peanut butter and soy sauce. You may need to adjust the soy sauce to taste — the mixture should taste a bit salty, and be slightly dark.
- When peanut butter is melted, reduce heat and add chicken broth and juice. Stir and simmer for about 3 minutes, until warm.
Pizza:
- Pizza dough of your choice
- Boneless, skinless chicken breast, cut into chunks
- 1 carrot, julienne cut
- Minced cilantro
- Minced green onions
- Sliced mushrooms
- Any other vegetables you might have/might want.
- Mozzarella cheese
- Preheat oven to 475 degrees.
- Prepare your crust.
- Stir fry chicken chunks and sliced mushrooms in 1/4 c. sauce mixture.
- Spread remaining sauce on the pizza, and spread carrot, cilantro, green onions, chicken and mushroom mixture, and cheese.
- Bake pizza for 10-12 minutes. Remove from oven and let sit for 3-5 minutes. Slice and enjoy!
