Grilled Squash and Zucchini with Dill and Feta
Sometimes, it’s really the simple things that are the best — the things that taste good, are good for you and take all of a few minutes to make. Today was a day for only simple things. Marc made some delicious glazed and grilled chicken (white meat for me, thighs for him), and we both threw together this grilled squash on the side. I seriously prepped this entire side dish in the time that it took Marc to walk the dog. Cooking it took a smidge longer than it would on a regular gas or charcoal grill, but since it’s a rainy and chilly day, we stuck with our Cuisinart Griddler. This was a nice addition to our meal, and we made enough for each of us to take extra squash (and chicken) to work tomorrow.

Grilled Squash and Zucchini with Dill and Feta

- 4-6 zucchini and/or squash, sliced lengthwise.
- 1 tsp. Dijon mustard
- 1/4 tsp. sugar
- 1 1/2 tsp. apple cider vinegar
- 1/4 c. olive oil
- 2 tbsp. chopped dill
- 1 shallot, sliced
- salt and pepper
- crumbled feta cheese
- Preheat grill to high heat. (grill, Griddler, etc.).
- Whisk together mustard, sugar, apple cider vinegar, dill and olive oil. Add shallots.
- Toss zucchini or squash halves in vinaigrette, make sure all is coated.
- Remove squash from vinaigrette and grill over medium high heat, until grill marks appear and squash is just tender.
- Place squash on a plate and then sprinkle with crumbled feta. Serve immediately.
