Crockpot Chicken Vindaloo

While reading my cooking blogs, I found this great recipe for chicken vindaloo, made in the crockpot.   Excited to make this recipe, I shared it with my sister, Cecilia.  Unbeknownst to either of us, we decided to both make it today.  It’s the perfect Sunday night meal — it is warm, comforting, and it took all of 20 minutes to slap together.  Plus, the house smells absolutely fantastic.

Marc and I didn’t quite follow the recipe to the letter — we had a larger can of crushed tomatoes than the recipe called for, we added peas and carrots, and shook in a bit of garam masala into the spices, because we didn’t happen to have any cardamom.  Even with all of these revisions, the dish turned out great.  Mmmm.  My sister also reported in from DC, and she and her roommate both wholly enjoyed it.  She also made some garlic naan to go along with it — and that recipe is forthcoming!

Crockpot Chicken Vindaloo

  • 2 cups fresh green beans, end snapped
  • 3 carrots, diced
  • 2 cups frozen peas, thawed
  • 1 lb. chicken thighs or breasts (I used both)
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 tbsp. fresh ginger (I used the tube ginger)
  • 1/2 tsp. cinnamon stick
  • 1 28-oz. can crushed tomatoes
  • 1 1/2 tbsp. curry powder
  • 2 tbsp. ground cumin
  • 2 tbsp. ground mustard
  • 1/2 tsp. garam masala or cardamom
  • 1/4 tsp. ground cloves
  • 1/4 – 1/2 tsp. cayenne pepper
  • 2 tsp. kosher salt (salt to taste)
  • Fresh cilantro or parsley
  1. Layer green beans, carrots, chicken, onion, garlic, ginger and cinnamon in crock pot.
  2. In a separate bowl, combine tomatoes and all spices.  Stir to mix well.
  3. Taste tomato mixture and salt as desired.  Pour sauce into crock pot.
  4. Cover crock pot and cook on low for 5 hours.
  5. One hour before serving, add thawed peas to mixture.  Heat through.
  6. Before serving, add fresh cilantro or parsley and toss gently into crock pot.
  7. Garnish with more cilantro or parsley and serve over rice.
