Garlicky Chicken Wraps

Let me start this post off by saying that this recipe is not a fast one.  It’s very putzy and has multiple parts to it.  I actually started making this last night, because the sandwich’s sauce needed a little bit of time to come together — and it also gave me plenty of time to marinate the chicken.  Bear all of this in mind if you want to make these wraps.  It totally pays off in the end, but it’s not something to just toss together any old time on a whim.

I highly recommend this for a summery meal — the chicken can go in the wrap warm OR cold, which makes it ideal to have this sandwich for lunch leftovers, too!

Garlicky Chicken Wraps

Marinade for Chicken

  • 2 chicken breasts, sliced into chunks
  • 1/4 c. olive oil
  • 1/2 tsp. dried tarragon
  • 1/2 tsp. dried parsley
  • 1/2 tsp. cayenne pepper
  • Juice of one lemon
  • Salt
  • Ground black pepper

For Sauce

  • 4 whole cloves of garlic, peeled
  • 1 tsp. olive oil
  • 1/4 c. fat-free sour cream
  • 1/4 c. grated Parmesan cheese
  • 1 tsp. milk
  • 1/4 tsp. dried oregano
  • dash black pepper
  • dash cayenne pepper

For the Sandwich

  • Tortillas
  • 1 sliced tomato
  • 1-2 handfuls of lettuce
  • Sliced pepper jack cheese
  1. Whisk all marinade ingredients and add chicken to an airtight container or big Ziploc bag. Marinate for at least 2 hours, but it’s best if you do it overnight.
  2. Preheat oven to 375 degrees and place garlic cloves on a cookie sheet.  Spray with cooking spray and drizzle a bit of olive oil over the cloves.  Bake for 15 – 20 minutes, until golden.  Allow to cool.
  3. When cool enough, mince roasted garlic and add it to the rest of the sauce ingredients.  Allow at least 2 hours to “set” in the refrigerator.
  4. When you’re ready to construct your sandwiches, bake chicken on a cookie sheet at 375 degrees for 15 minutes, or until juices run clear.
  5. Put together your sandwich to your liking — for ease, spread the sauce on the tortilla first.
