Chicken Taco Burgers

 

Happy happy Thursday!  This dish was made on Monday, and what a way to kick off our week!  We have finally been back on track for a normal week here in the Reichman household.  I had a great time cooking this week, and I am so glad I started with these burgers.  I LOVE chicken burgers, and I’ve played around with different varieties before.  This one is great, it definitely has a taco-seasoning kick, and the toppings are limitless.  We kept it simple, with pepper jack and a little bit of salsa, but next time, I am going to try avocado, lime-and-adobo sour cream or sliced mango.  Yum!

Chicken Taco Burgers

  • 1 lb. package ground chicken
  • 4 scallions, sliced
  • 1 1/2 tsp. chili powder
  • 3/4 tsp. cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne
  • 2 tbsp. chopped cilantro
  • 2 cloves garlic, chopped
  • 2 tbsp. cornmeal
  • Toppings of your choice
  • Buns of your choice
  1. Mix together ingredients through cornmeal, and salt to taste (DO NOT forget to salt … very important step in all chicken burgers!).
  2. Divide mixture into four patties, and pan fry, about 5-6 minutes on each side, or until cooked through.
  3. Top with sliced cheese and keep burgers on pan until cheese is melted.
  4. Serve on a bun with the toppings of your choice.
