Double Chocolate Banana Bread

Happy Easter everyone!  We have the luxury of being at home this Easter, which will be nice.  Usually we are on the road or on the go, coming back from Passover celebrations in New Jersey, but this year, we have the opportunity to enjoy the comforts of our own home.  We are planning an extremely traditional (just kidding) celebration:  church, and then dim sum, and perhaps a movie afterwards.  🙂  A traditional family Easter to me usually involves a big ham, lots of Polish sausage, eggs (which I don’t eat), and Polish babka.  That would be a lot of food for just the two of us, so we’re sticking to our alternative plans.  I did decide to make a banana bread in honor of the babka, and I must say, it turned out quite well. It’s a bit different from the buttermilk banana bread I made a few months ago, but both are delicious in their own special way.

Thankfully, Marc saves old bananas he doesn’t get to, and I defrosted some and whipped this up in just a few minutes.  It’s totally easy, and I think you should make some yourself, whether it’s a holiday or not.

Double Chocolate Banana Bread

  • 1 c. sugar
  • 2 eggs
  • 1/3 c. vegetable oil
  • 3 mashed bananas
  • 1 tsp. vanilla extract
  • 1 1/2 c. flour
  • 1/3 c. cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. semi-sweet chocolate chips
  1. Preheat oven to 350 degrees.  Spray the inside of a 8×4 loaf pan with cooking spray.
  2. Mix together eggs, sugar and oil with a blender until fully incorporated.  Add mashed banana and mix on medium speed until combined.
  3. Combine flour, cocoa powder and baking soda in a medium bowl.  Beat into banana mixture on low speed and mix until fully incorporated.  Stir in chocolate chips.
  4. Spoon batter into the pan.  Bake 60-70 minutes or until toothpick comes out clean.  Cool for at least 10 minutes and remove from pan.  Cool completely on wire rack.

    This looks great! Chocolate and bananas are always a winning combination.
